Ingredients

    • 4 or 5 parsnips, peeled and sliced into rounds
    • 1 onion, chopped
    • 2 cloves of garlic, chopped
    • 2 celery stalks, diced 
    • 1l (4 cups) gluten-free vegetable or poultry broth 
    • 2 apples, peeled, seeded an cubed 
    • Salt and freshly ground pepper, to taste

Preparation

  1. In a saucepan, over low heat, cook the parsnips with the onion, garlic and celery in the brother for about 30 minutes.
  2. Add the apples and continue cooking for 10 minutes.
  3. Using a food processor or blender foot, blend the soup until smooth.
  4. Season with salt and pepper to taste. Add broth, if desired.

 

* Can be kept for 5 days in the refrigerator.
