No-bake nutrition bars

Ingredients

    • 4 tablespoons maple syrup or honey
    • 2 cups (500 ml) buckwheat groats
    • ½ cup (125 ml) 70% cacao dark chocolate chips (or chocolate chopped with a knife)
    • ¼ cup (60 ml) raisins
    • ½ cup (40 g or 125 ml) sunflower seeds
    • 2 tablespoons hemp seeds
    • 1 cup (250 ml) 100% pure peanut or almond butter
    • 7 tablespoons water
    • 1 tablespoon milk or enriched soy or almond plant-based beverage

Preparation

  1. In a bowl, mix maple syrup, buckwheat groats, half of the chocolate chips, raisins, sunflower seeds, hemp seeds, peanut or almond butter and water.
  2. Pour the mixture in a 9 x 9 in (23 x 23 cm) square baking pan and press firmly with your fingers.
  3. In the microwave, melt the chocolate chips with the milk for 45 seconds to 1 minute. Spread the melted chocolate over the mixture.
  4. Cool down for at least 2 hours or over night. Cut into 24 bars.

Tip: these bars will keep for up to 5 days in the fridge.
