This complete, creamy, protein-packed and flavourful pasta dish is perfect for weeknight dinners!
Preheat oven to 200°C (400°F).
Place the Boursin cheese in the centre of a rectangular oven-safe dish and arrange the salmon, cherry tomatoes, and spinach around the cheese. Drizzle with olive oil, salt and pepper.
Bake for 25 minutes or until the salmon is cooked through and the cheese is melted.
Meanwhile, cook pasta in a large pot of boiling salted water, according to package directions. Reserve about 125 mL (½ cup) of cooking water, then drain.
When it comes out of the oven, lightly mash everything with a fork to form a creamy sauce.
Add the cooked pasta and a little of the reserved cooking water, if needed, to make the sauce smooth.
Garnish with lemon zest and a few turns of freshly ground black pepper. Enjoy!
