1 very large apple, peeled, cored and diced
Unsalted butter
🍯 Crumble
35 g (⅓ cup) rolled oats
2 tbsp packed brown sugar
2 tbsp all-purpose flour
2 tbsp melted butter
🧁 Muffins
170 g (1 ⅓ cup) all-purpose flour
1 ½ tsp baking powder
1 tsp ground cinnamon
120 g (½ cup) unsalted butter, softened
100 g (½ cup) packed brown sugar
2 eggs
1 tsp vanilla extract
125 ml (½ cup) milk
Half of the sautéed apple mixture
Preheat oven to 180 °C (350 °F) and line a muffin tin with paper liners.
Sauté diced apples in a little butter for 4-5 minutes. Set aside.
Prepare the crumble by mixing oats, brown sugar, flour, and melted butter.
In a bowl, combine flour, baking powder, and cinnamon.
In another bowl, beat butter and brown sugar until light and creamy. Add eggs and vanilla and beat again.
Incorporate dry ingredients alternately with milk. Finish with half of the sautéed apples.
Divide the batter into the muffin tin. Place the reserved apple pieces on top, then a spoonful of crumble. Press lightly.
Bake in the centre of the oven for 22 to 25 minutes, until a toothpick inserted into a muffin comes out clean.
