250 g (1 ¾ cup) apples, peeled and chopped
140 g (1 cup) raw almonds
Pinch of gluten-free ground cinnamon (optional)
Preheat oven to 180°C (350°F).
In a blender, mix apples, almonds and cinnamon until smooth and homogenous. Do not overmix to avoid a too liquid consistency.
Shape the mixture into 6 or 12 round cookies and place on a baking sheet lined with parchment paper.
Bake in the oven for 25 minutes or until lightly golden.
Let cool before serving.
