Ingredients

Avocado cut into small cubes 1
Mixed nuts 30 ml (2 Tbsp)
Cooked chickpeas 1080 ml (4 1/3 cups)
Mesclun salad 2000 ml (8 cups)
Grated Mozzarella cheese 125 ml (½ cup)
Dressing
Dijon mustard 10 ml (2 tsp)
Canola oil 15 ml (1 Tbsp)
Chopped garlic 2 cloves
Fresh lemon (juice) 1
Preparation
Combine the ingredients of the vinaigrette, mustard, oil, garlic and lemon juice, in a small bowl. Set aside. In a large salad bowl, put the mesclun salad, avocado, nuts and chickpeas. Pour in the dressing and mix. Garnish with the grated cheese and serve immediately.
