Frittata

Ingredients

    • 8 eggs
    • 60 ml (¼ cup) milk 
    • 1 small onion, chopped 
    • 2 zucchinis, cut into pieces 
    • 60 g (2 cups) baby spinach shoots 
    • 50 g (½ cup) grated cheese 
    • 30 ml (2 tablespoons) garlic powder 
    • 15 ml (1 tablespoon) dried parsley 
    • 5 ml (1 teaspoon) dried oregano 
    • Pepper to taste
    • 430 g (3 cups) cooked whole wheat spaghetti 
    • Grated cheese
    • 1 slice of whole grain bread

Preparation

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, beat eggs and milk with a fork.
  3. Add chopped onion, zucchini, spinach, cheese and seasonings.
  4. Mix well.
  5. In an ovenproof pie dish, place the cooked spaghetti in the bottom, then pour the egg mixture.
  6. Sprinkle with grated cheese.
  7. Bake in the center of the oven for 30 to 40 minutes.
  8. Divide the frittata in four and serve each portion with a slice of whole grain bread.
