Recette NutriSimple Thai-style peanut sauce & jarred cucumber salad

Ingredients

    Salad

    • 1/2 large English cucumber, sliced
    • 1 green onion, thinly sliced
    • 35 g (1/4 cup) shelled edamame, cooked
    • 75 g (2.65 oz) poke marinated salmon (reduced sodium soy sauce, sesame oil, sugar)
    • 1 tbsp white and black sesame seeds
    • 65 g (1/3 cup) crispy rice*

    *Crispy rice: mix 1 cup cooked basmati rice + 1 tbsp reduced sodium soy sauce + drizzle of sesame oil. Cook for 15 min at 180 °C (375 °F) on a baking sheet lined with parchment paper.

     

    Thai Peanut Sauce

    • 130 g (1/2 cup) peanut butter
    • 1 tbsp reduced sodium soy sauce
    • 1 tbsp maple syrup or honey
    • 1 tbsp rice vinegar
    • Drizzle of sesame oil
    • 1/2 tsp grated garlic
    • A little water (for texture)

     

Preparation

In a jar, add in the following order: cucumber, green onion, edamame, salmon, sesame seeds, and crispy rice.

Whisk together the sauce ingredients. Pour 1/4 of the sauce over the salad.

Close, shake, enjoy!
