DIFFICULTY LEVEL: Easy

Naturally sweet, fibre-rich bites that are ideal for a sustaining snack! The sweetness of dates, combined with comforting spices and pumpkin (or banana), makes them the perfect snack for active days. Plus, since they're no-bake, they'll be ready in minutes!

Ingredients

     

    • 10 large Medjool dates, pitted
    • 125 g (1¼ cup) gluten-free rolled oats
    • 30 g (¼ cup) pecans
    • 1 tbsp chia seeds
    • 1 tsp vanilla extract
    • 125 ml + 30 ml (½ cup + 2 tbsp) pumpkin puree
    • 1 tsp ground cinnamon
    • ¼ tsp ground nutmeg
    • ¼ tsp allspice
    • 2 tbsp water
    • 1 pinch salt

     

Preparation

In a food processor, blend the dates until a sticky paste forms.

Add all the other ingredients and blend again until smooth.

With your hands, shape into 12 small balls.

Refrigerate for 30 minutes for better firmness.

N.B. Keeps for 5 to 7 days in the refrigerator or up to 2 months in the freezer.


*Pumpkin → banana substitution

½ cup + 2 tbsp pumpkin purée = 1 medium, very ripe, mashed banana

Reduce the water to 1 tbsp (instead of 2), because the banana is moister.

Serve with a small container of Greek yogurt or a glass of milk for more satiety at snack time.
