Salad
*Crispy rice: mix 1 cup cooked basmati rice + 1 tbsp reduced sodium soy sauce + drizzle of sesame oil. Cook for 15 min at 180 °C (375 °F) on a baking sheet lined with parchment paper.
Thai Peanut Sauce
In a jar, add in the following order: cucumber, green onion, edamame, salmon, sesame seeds, and crispy rice.
Whisk together the sauce ingredients. Pour 1/4 of the sauce over the salad.
Close, shake, enjoy!
