Spiced Corn Wedges with Lemon Juice

This spicy and slightly zesty corn is the perfect side dish for a sunnier meal. This simple and tasty oven-roasted version is a delicious way to showcase Quebec's golden bounty!

Ingredients

    • 1 tbsp olive oil
    • ½ tbsp smoked paprika
    • ½ tbsp garlic powder
    • Salt and pepper, to taste
    • 4 ears of corn, cut into quarters


    For the sauce

    • 3 tbsp mayonnaise
    • 1 tsp sriracha (adjust to taste)

     

    • Juice of one fresh lemon

Preparation

Preheat oven to 190 °C (375 °F).

In a bowl, mix together the olive oil, smoked paprika, garlic powder, salt and pepper.
Coat the corn pieces with this mixture. Place the wedges on a baking sheet lined with parchment paper. Bake for about 40 minutes, turning halfway through cooking for even browning.

While cooking, mix the mayonnaise and sriracha in a small bowl. Set aside in the fridge.

As soon as the corn wedges are out of the oven, add a drizzle of fresh lemon juice. Enjoy immediately by dipping them in the spicy sauce that has been set aside.

  • For a more protein-packed version, replace the mayonnaise with Greek yogurt, which is just as creamy but richer in protein.
  • Add a pinch of fresh cilantro or parsley when serving for a touch of freshness.
  • Delicious with grilled chicken or white fish.
