This spicy and slightly zesty corn is the perfect side dish for a sunnier meal. This simple and tasty oven-roasted version is a delicious way to showcase Quebec's golden bounty!
For the sauce
Preheat oven to 190 °C (375 °F).
In a bowl, mix together the olive oil, smoked paprika, garlic powder, salt and pepper.
Coat the corn pieces with this mixture. Place the wedges on a baking sheet lined with parchment paper. Bake for about 40 minutes, turning halfway through cooking for even browning.
While cooking, mix the mayonnaise and sriracha in a small bowl. Set aside in the fridge.
As soon as the corn wedges are out of the oven, add a drizzle of fresh lemon juice. Enjoy immediately by dipping them in the spicy sauce that has been set aside.
